These little cookies are reminiscent of old-school animal crackers and shortbread. However, they are way more modern and elevated! We use upcycled pulp from local/organic nut milk company Fronks. What that means is we use the pulp from their nut milk production that would otherwise be composted. We dehydrate it, toast it, then process it into meal to be used as part of the “flour” base for these delicious treats. We sweeten them with maple syrup and sub the butter for coconut oil which makes them refined sugar-free and vegan. It’s a win-win all around!
